Pressure canning can feel intimidating.
Especially when you’re standing over a batch of green beans, venison, or chicken wondering if you’ve done everything right.
I’ve been pressure canning for years, and I still don’t rely on memory. Before I start a batch, I slow down and work through the same basic checks every time.
This pressure canning safety checklist is the system I use to check my equipment, verify my recipe, and make sure I haven’t skipped one of the details that matters.
It doesn’t replace a research-tested recipe or your canner’s instructions. Think of it as the checklist I keep in my head—and now, on paper.
Why Pressure Canning Safety Matters
Low-acid foods such as vegetables, meat, poultry, and fish can support the growth of Clostridium botulinum, the bacteria associated with botulism.
Pressure canning is the recommended method for safely processing these foods because it reaches temperatures above the boiling point of water.
And pressure canning isn’t just about pressure.
Time, temperature, pressure, jar size, food preparation, and altitude all work together. Change one part of a tested process, and you can change whether the food receives the heat treatment it needs.
That’s why I think of pressure canning less like a recipe and more like a procedure.
The recipe tells me what to do. The checklist keeps me from forgetting the little things along the way.
Pressure Canning Safety Checklist Before You Start
Before I wash a single jar, I work through this first section.
This is the part that’s easiest to skip when I’m excited to get a harvest put up.
Check That You Have a Pressure Canner
First, make sure you’re actually using a pressure canner.
- Confirm you’re using a pressure canner, not simply a pressure cooker.
- Check the manufacturer’s instructions for your specific model.
- Make sure the canner has the required rack and pressure-control components.
- Verify that your stovetop or cooktop can safely support the canner.
- Make sure the canner is large enough for the recipe and jar size you’re using.
Pressure cookers and electric multicookers such as Instant Pots should not be substituted for pressure canners for home canning. NC State Extension specifically distinguishes pressure canners from devices intended only for pressure cooking.
That’s an important distinction. A pressure cooker and a pressure canner aren’t interchangeable just because they both use pressure.
Inspect the Canner and All Its Parts
Before each canning session, I give the canner a quick inspection.
- Check the lid, body, handles, and locking mechanism for damage.
- Inspect the sealing gasket for cracks, dryness, or loss of flexibility.
- Make sure the vent pipe is clear.
- Check that the air vent or cover lock moves freely.
- Inspect the overpressure plug or safety fuse.
- Make sure the gauge or pressure control is intact and functioning.
- Confirm the rack is present and in good condition.
These parts aren’t there for decoration.
The gasket creates the seal. The vent allows air and steam to escape. The locking system keeps the lid secured under pressure. The overpressure device provides an additional safety function.
University of Minnesota Extension recommends inspecting these components before use and replacing worn parts as needed.
Know Your Gauge Type: Dial or Weighted
This is one step I wouldn’t skip.
First, figure out what kind of pressure control your canner uses.
If your canner has a dial gauge, it should be tested for accuracy at the beginning of each canning season. Gauges that test 2 pounds or more off should be replaced, while smaller differences may allow for adjustment.
University of Minnesota Extension no longer offers dial-gauge testing at its county or regional offices, so check with your canner’s manufacturer or your local Extension office for current testing resources.
If your canner uses a weighted or selective pressure control, the maintenance is different.
Mine has a selective pressure control set at 5, 10, or 15 PSI depending on what I’m processing. There’s no dial for me to watch. The weight releases pressure at a fixed point.
Weighted controls don’t require the same annual accuracy testing, but I still make sure the control isn’t damaged, warped, or clogged.
Either way, know what you’re working with before you start.
It changes what “checking your equipment” actually means.
The Pressure Canner I Actually Use
My aunt Janeen gave me my pressure canner as a gift back in 2012, and I’ve used it every canning season since.
It’s a Mirro 16-quart aluminum pressure canner with a selective pressure control. It’s been through more than a decade of green beans, venison, and whatever else I’ve put up that year.
Janeen also played a huge role in teaching me how to preserve food in the first place.
So every time I pull that canner out of the cupboard, there’s a little bit of her in it too.
Mirro is a long-established brand, and that’s something I appreciate more now than I did when I first unwrapped it. After more than a decade, I can still find replacement gaskets and parts.
Pressure Canning Safety Checklist for Your Recipe
You can have a perfectly maintained canner and still end up with an unsafe batch if the recipe isn’t appropriate for pressure canning.
This is where I think it’s especially important to resist the urge to improvise.
Use a Research-Tested Recipe
When I’m pressure canning, these are the rules I follow:
- Choose a recipe from a trusted, research-based source.
- Confirm that the recipe specifically calls for pressure canning.
- Use the specified food, ingredients, quantities, jar size, and preparation method.
- Don’t substitute ingredients unless the source specifically says the substitution is acceptable.
- Don’t invent your own processing time or pressure.
The National Center for Home Food Preservation and USDA-backed resources emphasize tested recipes and processes because the processing conditions are developed for the specific food and preparation.
“Close enough” isn’t a safe canning method.

When I started getting serious about preserving food again, I wanted one book I could leave on the counter and actually use.
For me, that’s The Ball Complete Book of Home Preserving.
It’s the book I reach for when I’m deciding what to make, trying to figure out whether something can be canned, or brushing up on the basics before starting a batch.
It covers much more than pressure canning, too. There’s water-bath canning, pickling, jams and jellies, freezing, and drying.
It’s become one of those books I reach for over and over.
That doesn’t mean I treat it as the final word on food safety.
When I’m pressure canning something new—or I have a question about whether a particular process is safe—I cross-check it against current guidance from the National Center for Home Food Preservation, USDA, and university Extension programs.
Write Down the Processing Instructions
Before I start, I write down the numbers I’m going to need.
- Food being canned
- Jar size
- Headspace
- Processing time
- Required pressure
- Gauge type
- Altitude adjustment
- Raw pack or hot pack, if specified
This saves me from the inevitable:
“Wait. What was that number again?”
UMN’s pressure-canning guidance emphasizes that processing time, jar size, headspace, gauge type, and elevation all matter.
I’d rather take thirty seconds to write it down than stand over a hot canner trying to remember.
Pressure Canning Safety Checklist for Preparing the Jars
Once I know the recipe and the canner is ready, I move on to the jars.
- Inspect jars for cracks, chips, and other damage.
- Prepare lids and rings according to current manufacturer instructions.
- Prepare jars according to the recipe.
- Prepare the food exactly as directed.
- Measure headspace carefully.
- Remove trapped air if the recipe calls for it.
- Wipe the jar rim clean.
- Apply lids and rings according to the recipe or manufacturer’s instructions.
Don’t improvise the headspace.
Too much headspace can interfere with processing and sealing. Overfilling can allow food to interfere with the lid and sealing surface.
The exact headspace should come from your tested recipe.
Pressure Canning Safety Checklist During Processing
This is where the order of things really matters.
Load the Canner Correctly
- Add the amount of water specified by your canner or tested recipe.
- Place jars on the rack using a jar lifter.
- Keep jars upright.
- Secure the lid according to the manufacturer’s directions.
- Leave the vent open while the canner is heating.
USDA guidance calls for hot water in the canner, jars placed upright on the rack, and the canner heated with the vent open.
Some recipes require more water than the standard amount, so follow the recipe and manufacturer’s instructions for your specific situation.
Vent the Canner
Don’t rush this part.
Once steam begins escaping freely, let the canner vent continuously for 10 minutes before closing the petcock or adding the pressure regulator.
That step removes air from the canner.
Trapped air can result in a lower temperature than the pressure reading suggests, which can contribute to under-processing.
Ten minutes is a small amount of time to give up when the food you’re putting on the shelf is meant to feed your family months from now.
Reach and Maintain the Correct Pressure
- Close the vent or add the weight only after the full venting period.
- Watch the gauge or pressure control carefully as pressure rises.
- Start the processing timer only when the recipe’s required pressure has been reached.
- Adjust the heat as needed to maintain the required pressure.
- Follow the altitude adjustment specified by the recipe.
The processing clock doesn’t start simply because the canner is hot.
It starts once the required pressure has been reached according to the tested process.
What If the Pressure Drops?
This is one of those moments when I would rather stop and check the instructions than guess.
If pressure drops below the level required by your tested recipe, don’t simply add a few minutes because it was “probably close enough.”
Follow the instructions for the specific food and process you’re using.
UMN notes that interrupted pressure-canning processes may require the processing time to start over.
Pressure Canning Safety Checklist After Processing
Getting the canner off the stove isn’t the finish line.
There’s still a little work to do.
- Turn off the heat when processing time is complete.
- Let the canner depressurize naturally.
- Don’t force-cool the canner.
- Wait before removing the lid.
- Open the lid away from your face.
- Remove jars carefully and keep them upright.
- Allow jars to cool undisturbed.
- Check seals after cooling.
- Refrigerate or reprocess according to current guidance if a jar fails to seal.
- Label jars with the contents and date.
- Store properly.
UMN recommends allowing the canner to cool without forcing it, waiting 10 minutes after depressurization before opening the lid, and allowing jars to cool at room temperature for 12 to 24 hours.
The cooling period is not the time to start moving jars around, tightening rings, or checking whether they’ve sealed every five minutes.
Let them sit.
The Pressure Canning Mistakes I Would Never “Just Wing”
There are plenty of kitchen shortcuts that don’t matter much.
Pressure canning isn’t where I’d take them.
Treating a sealed jar as proof of safety
A beautiful vacuum seal doesn’t prove that a low-acid food was safely processed.
The seal tells you something about the physical condition of the jar. Food safety also depends on using the correct tested process.
Changing a tested recipe
This is probably the hardest rule for a creative cook.
Don’t make a pressure-canning recipe your own unless the modification has been evaluated as safe.
Even ingredients that seem harmless can change density, acidity, heat penetration, or the amount of time required for safe processing.
Skipping gauge or control verification
A dial gauge or pressure control is a measurement instrument, not decoration.
If a dial isn’t accurate, or a weight is damaged, the pressure you’re relying on may not match what’s actually happening inside the canner.
When I Would Stop and Throw the Batch Out
When in doubt, I don’t taste it.
Before opening a home-canned jar, check for obvious warning signs such as leaks, bulging, spurting liquid, off odors, broken seals, or other signs of spoilage.
USDA guidance says suspicious jars should be discarded without tasting.
A failed seal isn’t automatically the same thing as a dangerous jar. It does mean you need to follow the appropriate reprocessing or refrigeration guidance for that specific food.
And if I don’t know?
I go back to the source.
I don’t rely on smell, appearance, or a guess to decide whether a questionable jar is safe.
My Pressure Canning Safety Checklist
If you want one version to keep beside the stove, this is the order I’d use:
- Canner: Confirm it’s a pressure canner and check the manufacturer’s instructions.
- Parts: Inspect the gasket, vent, safety devices, gauge or control, lid, rack, and locking system.
- Gauge: Test a dial gauge each season, or confirm a weighted/selective pressure control isn’t damaged.
- Cooktop: Confirm your stove can safely support the canner.
- Recipe: Use a current, research-tested recipe.
- Altitude: Confirm the correct pressure for your elevation.
- Jars: Inspect for chips and cracks.
- Headspace: Measure exactly as directed.
- Loading: Keep jars upright on the rack.
- Venting: Vent continuously for 10 minutes.
- Pressure: Reach the required pressure before starting the timer.
- Timing: Follow the tested processing time exactly.
- Pressure drop: Follow the recipe’s instructions if pressure falls below the required level.
- Cooling: Let the canner depressurize naturally.
- Lid: Wait before opening and always open away from your face.
- Jars: Cool undisturbed for 12 to 24 hours.
- Seals: Check seals after cooling.
- Storage: Label, clean, and store finished jars appropriately.
The Rule I Keep Coming Back To
Pressure canning safety isn’t about being fearless.
It’s about being methodical.
Before I put a jar into the canner, I want to know that I’ve checked the equipment, verified the recipe, accounted for my elevation, and written down the numbers I’m watching.
That’s the kind of confidence I’m trying to build with every batch.
And honestly, that’s why I like having a checklist.
When you’re preserving food your family is actually going to eat months from now, there’s no prize for doing it from memory.
